There are few things in modern life that feel both grounded and futuristic … but that’s exactly how I’d describe being a Lufavore. Somewhere between the grrocery list shuffle chaos and dinner on the fly, we discovered Lufa Farms … and suddenly, sustainability felt manageable. Even beautiful.
Based in Montreal, Lufa is the first company in the world to build a commercial rooftop greenhouse, which they did back in 2011 (long before most of us knew what hydroponics even meant). They now grow over 75 varieties of vegetables year-round in sprawling rooftop greenhouses (one of which is the largest on Earth) using closed-loop irrigation, biocontrols instead of pesticides, and zero new land. Just sky and soil and sunlight.
One of the quiet geniuses of Lufa Farms is how many of their greens arrive with the roots still attached. It’s more than a novelty, it gives you flexibility. You can cut what you need, when you need it, and the rest stays fresh longer. We’ve even planted a few in pots, including one in a repurposed piano bench on the deck.
